I'm actually already in the process of changing that using a fairly similar approach to yours. As for HTML tables, I can do that, I have to change quite a few pages related to inline queries anyway. Since we have a CSS extension though switching over to definition lists with wiki formatting for the infobox templates should be much simpler.

Just to follow up on this, after cleaning up the templates I've refrained from moving over to HTML syntax for tables since it wouldn't have helped making the templates easier to read. I did however add more comments which should help.
